June is Rhubarb picking time!   This delicious and easy to grow fruit can be transformed into so many different dishes.  Try this easy Rhubarb Crisp recipe (just like Apple Crisp) but with a “summer twist”…

IMPORTANT:  Rhubarb leaves are poisonous, so remove and discard them before slicing the stalks into 1-inch pieces for cooking.

Do not eat the leaves.

  

Ingredients 

  • 6 cups rhubarb
  • 2/3 cup sugar
  • 3 tablespoons all purpose flour
  • 1/2 teaspoon cinnamon

Topping

  • 3/4 cup rolled oats
  • 3/4 cup brown sugar packed
  • 6 tablespoons flour
  • 1/2 teaspoon cinnamon
  • 6 tablespoons butter

Instructions

  1. Preheat oven to 375°
  2. Wash and rinse rhubarb and cut into pieces.
  3. Mix rhubarb with sugar, flour, and cinnamon. Place in a baking dish.
  4. In a separate bowl, combine topping ingredients and sprinkle over rhubarb mixture.
  5. Bake for 35 – 40 mins minutes or until rhubarb is tender and topping is golden.
  6. Cool 5-10 minutes before serving. Top with ice cream or whipping cream.
  7. Fresh mint can be used as a garnish.
